After ten years as a chef, including working at high-end resorts in New Zealand, Emily Phillips and her husband, Stuart, decided to take ice cream to the next level. No shortcuts, no pre-made base mixes, no weird preservatives or chemicals, no frozen berries – just ice cream that we make from scratch to showcase local, Oregon dairy, and using local, seasonal fruit, berries, and produce.
We started Red Wagon Creamery in late 2010, beginning by developing recipes for nine months, using our lucky neighbors as taste-testers. Then, in May 2011, Red Wagon Creamery began making ice cream from scratch using six home Cuisinart machines, and selling scoops from a refurbished Haagen-Dazs pushcart we bought on Craigslist.
